PIESTHETICS is a foodblog about pie.
It is a document of my never-ending quest for perfect pies: pies that not only slice up beautifully and maintain their shape on the plate, but also taste like nirvana cased in pastry.
Why? Because I think food that tastes good should look good, too. Even something as simple and homey as pie. Every pie I make—whether it’s a riff on my grandmother’s apple pie or a new experiment that involves zwieback (no joke)—is an attempt to achieve the perfect balance between soulfood and food-as-art.
I want my pies to look good enough to eat and then actually deliver. In fact, I want all pies to do that, even the last forlorn slice of cherry pie in the pastry case at an all-night diner at 2am.
At Piesthetics, you’ll find notes on kitchenware and gadgets, stories about my never-ending hunt for vintage recipe pie plates, and my reviews of the pies I’ve sampled at pie-baking establishments around the country. But all of this is really just grist for the mill— Piesthetics is ultimately about the art and craft of making pie, and that means one thing: practice, practice, practice.
So every week, I bake a new pie and feed it to my friends. Piesthetics is where I critique my creations and offer up recipes and tips for all those who share my belief that the Holy Trinity is really comprised of Butter, Sugar, and Flour. You know who you are. Welcome. And enjoy!
